however, i bought a frozen duck this morning for my new year's dinner, it's pretty thawed now, and i'm looking for a recipe to make the roast bbq duck of my memories. (i'm in a town that, despite having a SUBSTANTIAL chinese population, has deplorable chinese food.)
i know i'm looking at english websites (which is really my first problem), but c'mon, two of the top recipes say a) cut out all the fat or b) cut off and THROW away the tail.
dude. can we say inauthentic???
